Aguachile Mazatlan is the king of ceviche at Santa Maria. It offers mouth-watering mahi mahi unabashedly swimming in a jus of jalapeno, cilantro and roasted leche de tigre. Served with delicate slices of creamy avocado, crisp cucumber, vibrant cherry tomatoes and sweet drops of smoky fish sauce, it’s the kind of meal where you have to remind yourself it’s not polite to lick the bowl. (But we wouldn’t judge, if you did).
